A licensed technician should inspect your suppression system above the cooking equipment twice per year. But is that enough?


There are several items that should be checked on a monthly basis. Moreover, they can be done by the owner, a manager, or an employee. You don’t need a license for the monthly inspections.

Fire Safety Tip 1: Check Pressure Gauges

Check the pressure gauge on the suppression system tank and fire extinguishers to ensure the needle is in the green range. The pressure in the tanks is contained by a rubber seal.

If it leaks, the pressure will bleed out. If it appears low, call your fire service company immediately. They will inspect the system and remedy any problems.

Tip 2: Checking Caps

Check that the rubber or metal nozzle caps are in place on the discharge nozzles just above the cooking equipment. A missing or loose cap can allow grease fumes to plug up the nozzles, preventing proper operation.

If the nozzles can’t be cleaned, new nozzles are quite expensive. Some nozzles don’t have caps, but do have a small piece of “foil” over the nozzle opening to prevent contamination.

Fire Safety Tip 3: Access To Equipment And Exits

Make sure the exit doors, extinguishers and manual pull station are not blocked and accessible.

Tip 4: Clean Hoods And Filters

Check the cleanliness of the hood and filters above the cooking surfaces. Built up grease catches fire quickly. There are companies that specialize in hood cleaning services. The hood and vent should be cleaned on an annual basis. Check the grease pan located next to the filters to make sure it’s not overflowing.

Fire Safety Tip 5: Fire Safety Training

Make sure key personnel have training in evacuation procedures. Additionally, ensure they know how to safely use the fire suppression equipment. I can assure you that if these fire safety times are followed correctly, you are much less likely to have a kitchen fire occur in your restaurant.
